Hays Take On: Pajarito

Craft cocktails meet exquisite Mexican bistro in St. Paul at one of our new favorites, Pajarito. With an incredible atmosphere, creative cocktails, and incredible food, this was a must try.

The Place

Located just down West 7th Street from downtown St. Paul, Pajarito sits on the corner of W Michigan Street.  With street parking all around and their own personal parking lot, it usually isn’t hard to find a place to put your vehicle. When walking into the buildings corner entrance, you’ll notice the beautiful bar as well as incredible tall ceilings along with incredible wall and hanging art. We prefer sitting up at the bar where there’s ample space for enjoying your meal. There’s also plenty of space in the dining area, however this place fills up quickly, so make sure you get there before the rush or be prepared to wait for a bit.


The Product

Pajarito packs an incredible one, two punch with their great cocktail menu as well as their crazy delicious food, both complementing each other incredibly. When it comes to drinks, tequila lovers rejoice, this menu is packed with tons of great options from their old fashioned that’s made with Herradura Anejo Tequila to their signature Habanero Cilantro Margarita that’s so popular they keep it on tap! For the sweet drinkers try the Pajarito Paloma 2.0 that has a grapefruit lime twist or try the Whistling Kitty Chaser which goes down easy! They also feature a seasonally rotating punch as well as have a great selection of beers. We’ll start of the food portion from the beginning, with their chips, salsa, and guacamole. Fresh, crispy, warm chips served with your choice of salsas, we warn you to be very careful with the extra spice habanero salsa… it’s real hot. The guacamole comes in a nice blend of chunky and smooth and will be gone before you know it! Other great appetizers are their elote style brussels sprouts which you’ll find on almost every table or the enmoladas. For dinner, you can’t go wrong with any of their tacos, but you’ll find us flipping a coin between the barbacoa and the pork carnitas. Both come packed with meat and add a little Cry Baby Craig’s hot sauce and you have a true masterpiece. Other dinner options include a great chipotle mojo chicken with sweet corn or a great pork chop with an agave glaze and mole verde.


The Take

We keep looking for excuses to be in St. Paul so we can stop by Pajarito for tacos or a drink… This place will go high on our list for Take of the Year in the food category or the drink category, as we just can’t get enough.
